Ingredients
1/2medium sized red onion
2-3medium sized tomatoes
1-2green chillies(adjust spice levels)
1large red bell pepper
1large green pepper
1large yellow pepper
2packs of fried tofu or firm tofu
1tbspOil
1tspCumin seeds
1tspGinger garlic paste
Water 1/4 cup
Kadai masala Spice blend :
2tspCorriander powder
1tspKashmiri red chilli powder
1/2tspblack pepper powder
1tspfennel seed powder
1/2tspcumin powder
1tspkasoori methi
Salt to taste
1tspgaram masala
Instructions
Chop all the veggies into cubes, keep the spice blend ready, purée the tomatoes and keep it ready.
If you are using fried store bought tofu, chop into cubes and keep it ready. If you are using firm tofu, drain the water from the container, pat it dry with paper towel or kitchen towel, coat it with maida or plain flour and shallow fry it until golden
Heat a wide pan on medium flame, add oil, once hot add cumin seeds, ginger garlic paste, green chillies...
Next add tomato purée, cook the tomatoes and next toss all the chopped veggies (peppers, tofu and red onions) mix it in the tomato.
Next add the spice blend for kadai masala, salt and mix it in thoroughly for 5 mins sauté on medium flame.
Add water and cover and cook for 5-10 mins on low to medium flame until the masala comes together
