Simple Egg gravy in Indian Style. Perfect combination for Rice or roti.

onion finely sliced
Red chilli powder
Black Pepper Powder
Coriander leaves for garnish .
In a pan add oil, add mustard seeds and let it sputter, once done add the the cumin seeds, Curry leaves and then add the Garlic paste, sauté for a few mins.
Next add the sliced onions add some salt and cook until the onions are browned a little.
Then add the pureed tomatoes, cover and cook until the tomatoes go soft.
Next add in the masala powders ( red chilli, turmeric, corriander, black pepper, cumin and garam masala). Cook the masalas until you see oil separating on the sides.
Add water to the masala and cover to cook until you all the gravy comes together.
Finally add in the boiled eggs and toss it in to add more flavour in the eggs slit it on all sides until the mid way.
Garnish with corriander leaves. Serve it hot with your favourite rice or bread 🤤.
The tip to a great version of this recipe is browning the onions and cooking tomatoes to a nice smooth gravy consistency! .
