Made this vegan Butter chicken (With Jack fruit) recipe last week for my family visiting us in Yokohama, For the dinner I had different plans and came to know that my SIL has turned vegetarian since the last time I met her (which was about a few years ago). So Quickly changed plans to complete vegetarian/Vegan meal.

Used Young Jack fruit from a can (you can find young Jack fruit from Asian / Thai Grocers).  

How does Vegan Butter chicken (with Jackfruit) taste

I was quite amazed by the meaty texture of the jack fruit. As an ingredient jackfruit is bland and has no flavour so it quickly absorbed and blended into the curry without a problem. If you would ask me would the vegan butter chicken (with jackfruit) replace the Original, in terms of taste ? – To be honest I really couldn’t compare it to chicken, I am learning to enjoy the new flavours without any bench marks of late. but I definitely enjoyed the new texture other than paneer which I am used to.

The creaminess of the vegan butter chicken (with Jackfruit) comes from cashews and cream of the coconut milk. .

Raw Jack fruit – Nutrition

Raw/young Jack fruit is said to be a lot of health benefits such , It Is High In Protein. This is unusual for a vegetable, but raw jackfruit is one of those rarities that contains 3g of protein per cup. It Is said to be Low in Calorie and helps Boosts Immunity. Study claims that It Aids Heart Health and last but not the least It Is A Great Meat Substitute.

Ingredients required to make Vegan Butter chicken (with Jackfruit)

  • 1 Can young Jack fruit 
  • 2 tbsp Tandoori Masala 
  • 1 tsp Oil 
  • Salt (To taste)
  • 3/4 th Tomato Can 
  • 1 large Onion 
  • 12 Cashews (Whole)
  • 3/4 tbsp Ginger Garlic Paste
  • 1 stick Butter (Vegan)
  • 1 tsp Oil 
  • 2 cups Water 
  • 2 tsp Kashmiri Red chilli powder 
  • 1 tsp Corriander Powder 
  • 1.5 tsp Cardamom Powder
  • 1/2 tsp Nutmeg Powder 
  • 1 tsp Cumin Powder 
  • 1 tsp Garam Masala 
  • 3/4 tsp Cinnamon Powder 
  • 2 tbsp Kasuri Methi 
  • 1.5 tbsp Tomato Ketchup 
  • 1 tsp Sugar or honey 
  • 1/2 can Coconut Milk

Prep work before you begin

Roughly chop onions, drain and wash young jack fruit.

Pictorial recipe (step by step)

Open a canned young jack fruit, pour out the brine and wash them well in plain running water and chop them into small pieces. 

Add the rinsed Raw jackfruit to a bowl and add ready to use tandoori masala and little salt, let it marinate for about 20 minutes. 

Once the jack fruit is marinated, toss the jack fruit onto a cast iron skillet with little oil and let it cook for about 5-10 minutes and roast well. Once done, remove it and keep it aside for late. 

Heat a large pan with Lid to medium flame, once hot, add oil.

Add in roughly chopped onions and cook until the onions are soft and translucent and then add in the tomatoe puree from can, cover and simmer for about 5 minutes.

Next in goes the cashews and mix it in. Let it cool down and once it is cooled completely, blend to a smooth paste.

(Add a little water to the same pan and wash it off and use the liquid to blender too)

Now to the same cleaned pan, add butter, allow it to melt, add in 1/2 tsp Kashmiri red chilli powder, ginger garlic paste and quickly saute for 1 minute on low flame.

Pour in the Pureed onion and tomatoes mix to the pan and stir it well. 

Add water , the spice powders – Cardamom,Nutmeg, Cumin, Red chilli powder, Corriander powder, Garam Masala, cinnamon powder, kasuri methi and mix it in.

Cover and simmer for about 5 -7 minutes  on medium flame. 

Next add in the pan fried jack fruit, ketchup, little honey/sugar if needed, check for salt (if required) and mix it in, cover and simmer for 5 more minutes. 

Finally add coconut milk to your liking about 1/2 can, reserve 3 tbsp for final garnish.

Mix it in a cook for 5 more minutes, switch off the flame and Garnish with reserved coconut milk.

Garnish with some kasuri methi and serve with hot basmati rice.

Tips

Remember if you will be using fresh young jack fruit then there is no need to wash it. IF using canned one if the brine is not washed properly, it may leave a bitter taste in the curry.

  • 1 tsp Sugar or honey
  • 1/2 can Coconut Milk

Instructions

  • Next add in the pan fried jack fruit, ketchup, little honey if needed, check for salt if required and mix it in. Cover and simmer for 5 more minutes.
    1.5 tbsp Tomato Ketchup, 1 tsp Sugar or honey
  • Finally add coconut milk to your liking about 1/2 can, reserve 3 tbsp for final garnish.
    1/2 can Coconut Milk
  • Mix it in a cook for 5 more minutes, switch off the flame and Garnish with reserved coconut milk, add some kasuri methi for garnish and serve with hot basmati rice.
    2 tbsp Kasuri Methi, 1/2 can Coconut Milk
