Sweet Potato Brownies are a healthy take on regular brownies, It is free from refined sugar and flour. Perfect to satisfy the cravings for weight watchers.

Sweet potato is such a celebrated root vegetable in Japan. Most super markets sell them steamed. I personally think they are a healthy to satisfy to sweet cravings.

These brownies are made from sweet potatoes making it a very nutritious option. I love the idea that I can had my son eat sweet potatoes like this because otherwise he wouldn’t.

This sweet potato brownies use minimal ingredients , making it easy to make. If you scroll to read up the alternatives section, I have given alternative options to the ingredients so you can mix and match with what you have in hand.

I usually like to use to use sweet potatoes a bit spiced up like to make sweet potato kebabs or burgers. This is a great recipe to get my little one to eat. To my surprise he ate it and couldn’t tell the difference between his usual brownie and this one.

Ingredients required to make the sweet potato brownies

  1. Boiled and peeled Sweet potatoes 1 large
  2. Unsweetened Cocoa powder 6 tbsp
  3. Coconut oil 2 tbsp
  4. Maple syrup 6 tbsp
  5. Salt a pinch
  6. Almond flour 100 GMs
  7. Stevia 1.5 tsp add to taste
  8. Egg 1 whole
  9. Water 1/4 cup to loosen up the batter
  10. Semi sweet chocolate as desired. roughly chopped
  11. Vanilla extract 1 tsp

Prep work before you begin baking sweet potato brownies

Steam / Boil the sweet potatoes

Pre heat the oven.

Tips

The sweet potato can be steamed, boiled or baked before using in this recipe.

I had cut a long sweet potato into 3-4 large pieces and pressure cooked with water for up to 3 whistles and pealed the skin and used in this recipe.

Do not discard the water after cooking the sweet potatoes, they are nutritious and can be used to loosen up the batter.

Alternatives Versions

This sweet potato brownie recipe uses almond flour as a a base to add some chewiness to it. Powdered Oat flour can be used incase you don’t have almond flour.

Maple syrup can be replaced with Honey and any other sweetener. Adjust to your sweet tooth.

  • Mash the sweet potato with the water in which it was boiled.
  • Add all the ingredients one after the other (Cocoa powder, Almond flour, Coconut oil, Maple syrup, salt, stevia powder, vanilla extract.
  • Mix all ingredients together with a hand blender except the chocolate chips.
  • Finally Add the roughly chopped semi sweet chocolate. (Reserve some to sprinkle on top)
  • Pour into a parchment paper lined baking tray. (Rub some coconut oil on the sides to stick the paper to the tray)
  • Add the remaining chopped chocolates on top.
  • Bake in a preheated oven 180 C, 40 mins.
  • Cool it cut and serve.
