Red Amaranth Stir Fry

Red Amaranth and Garlic recipe is a south Indian style Stir Fry recipe using garlic to flavour the greens and garnished with shredded coconut

When I found Red amaranth in Japan, I was over the moon as it is a variety of green I don’t usually find in Japanese super markets. Red amaranth is a variety of amaranth greens also known as mulai keerai in Tamil. It is a great side dish to rice and roti.

In this recipe we will be using fresh garlic to add a nice flavour to the red amaranth leaves. This variety of green may be a bit bitter hence I like to add garlic to it as it compliments well.

If you haven’t read about this super food, let me share it with you again. It is a power house of nutrients and very rich in iron and is said to be having more than other counter parts. Red amaranth is also rich in fibre and hence is diabetic friendly and may aid in easing digestion.

How to eat Red Amaranth Stir Fry

I like to serve it with hot rasam rice or even curd rice. This can be even eaten as a sandwich with some cheese if you are not a big fan of rice.

Prep work before you begin

The most important thing I have to share is that to wash off the leaves throughly. Amaranth leaves in particular tends to make the dirt so let it soak in salted water and allow the dirt to settle.

Trim the leaves off the stem. You can keep the part of the stem which is soft and discard as it gets tough. Use the hard part of the stems for another favorite recipe of mine called Thandu pachadi.

Tips

Before you begin, I want to tell you, don’t mind the large quantity of the spinach it may look like a lot but I promise it will wilt down to boy 20 % of it. So choose a large pan to start with.

Shelf life

Cooked Greens are best consumed immeditately or on the same day. I would recommend the same.

How to make Red Amaranth and Garlic Stir Fry (Pictorial recipe)

1. Trim the leaves of the amaranth leaves keep the tender part of the stem and discard when it starts to toughen.

2. Wash the leaves several times to remove any dirt sticking to the leaves. Chop them finely and keep it ready.

3. Heat a pan to medium flame, add oil and once hot add in the mustard seeds. Allow it to sputter and next add the urad dal, let it brown a little and then add the cumin seeds. 

4. Next add in the finely sliced garlic and saute for a minute or two.

5. Next add the finely chopped onions and saute it until the onions have gone soft. 

6. Add in the chopped red amaranth leaves. Mix it in. 

7. In a few minutes the leaves will shrink in volume, add salt to taste. 

8. Finally add the shredded coconut, mix it in and turn off the flame.

Ingredients

  • 1 big Bunch Red amaranth Leaves About 4 cups loosely packed
  • 1/2 cup onion Finely chopped
  • 1-2 Dried red chilli
  • 1/2 tsp Mustard seeds
  • 1 tsp Urad dal
  • 1 tsp Oil
  • 1/2 tsp Cumin seeds
  • 3-4 Garlic Pods large pods thinly sliced
  • 2 tbsp Shredded coconut
  • salt to taste
