
Sweet Potato Brownies

Ingredients
- Boiled and peeled Sweet potatoes 1 large
- Unsweetened Cocoa powder 6 tbsp
- Coconut oil 2 tbsp
- Maple syrup 6 tbsp
- Salt a pinch
- Almond flour 100 GMs
- Stevia 1.5 tsp add to taste
- Egg 1 whole
- Water 1/4 cup to loosen up the batter
- Semi sweet chocolate as desired. roughly chopped
- Vanilla extract 1 tsp
Instructions
- Mash the sweet potato with the water in which it was boiled.
- Add all the ingredients one after the other (Cocoa powder, Almond flour, Coconut oil, Maple syrup, salt, stevia powder, vanilla extract.
- Mix all ingredients together with a hand blender except the chocolate chips.
- Finally Add the roughly chopped semi sweet chocolate. (Reserve some to sprinkle on top)
- Pour into a parchment paper lined baking tray. (Rub some coconut oil on the sides to stick the paper to the tray)
- Add the remaining chopped chocolates on top.
- Bake in a preheated oven 180 C, 40 mins.
- Cool it cut and serve.
