Muttai Thokku kerala style

Muttai Thokku – kerala style is a South Indian style egg curry / roast recipe where boiled eggs are cooked in an thick onion and tomato gravy.
I am an egg addict. I have grown up eating eggs everyday and I have great memories of my mom serving me hot rasam rice and eggs, I literally feel that’s more than enough for me to survive. Having said that I think eggs are very versatile and is a very nutritious food for anyone.
I always keep stock of eggs in my kitchen so. The simplicity of an Indian style egg Thokku or muttai thokku is mind blowing.
Thokku in Tamil means like a thick and condensed gravy. I have found taken some inspiration from Kerala style egg roast and used coconut oil in the recipe.

Ingredients required
- 1 onion finely chopped
- 2 medium sized tomatoes finely chopped
- 3 tbsp coconut Oil
- 1 tsp Ginger garlic paste
- red chilli powder – 1 tsp
- 1 tbsp corriander powder
- 1/4 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp salt
- 3-4 boiled eggs with slits
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/4 cup water
- Coriander leaves for garnish .
Prep work before you begin
Finely slice the onions
Puree the tomatoes
Boil the eggs and keep them ready.
Tips
Boil the eggs to medium done. Adding salt and vinegar to the boiling water, helps in peeling the eggs easily.
Muttai Thokku
Equipment
- pan, chopping board, knives
Ingredients
- 1 onion finely sliced
- 1.5 cup tomato puree
- 3-4 tbsp coconut Oil
- 1 tsp Garlic paste
- 3 tsp Red chilli powder
- 1 tsp corriander powder
- 1/4 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp cumin powder
- 1 tsp Black Pepper Powder
- 1 tsp salt
- 5 boiled eggs
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- a few Curry leaves
- 1/2 cup water
- Coriander leaves for garnish .
Instructions
- In a pan add oil, add mustard seeds and let it sputter, once done add the the cumin seeds, Curry leaves and then add the Garlic paste, sauté for a few mins.
- Next add the sliced onions add some salt and cook until the onions are browned a little.
- Then add the pureed tomatoes, cover and cook until the tomatoes go soft.
- Next add in the masala powders ( red chilli, turmeric, corriander, black pepper, cumin and garam masala). Cook the masalas until you see oil separating on the sides.
- Add water to the masala and cover to cook until you all the gravy comes together.
- Finally add in the boiled eggs and toss it in to add more flavour in the eggs slit it on all sides until the mid way.
- Garnish with corriander leaves. Serve it hot with your favourite rice or bread 🤤.
